A trick I was taught a few years back goes as follows:
Process the ginger (peel & all!) in a processor with some white wine. Store in a non-reactive container. I use a plastic 1 gallon mayo. containter. It will keep good flavor and maitain its appearence for quite some time.

I peel the ginger, cut it into chunks and put the pieces into a jar of cooking sherry. It seems to keep indefinitely if you make sure to use only clean utensils when removing or replacing the pieces of ginger. Hope this helps.

Thumbs up

The most effective way to store fresh ginger is to freeze it. Grate or shave to use.

Cool

After a few days of any storage method, would you still call it fresh?

Cool

I just pop big chunks, peel and all, into enough vodka to cover. When you're ready to use it, the peel will come off easily just by scraping it

The freshest way to store ginger is put it in a pot of soil or sand. HONEST! It might even grow.
