Mapiva - I've not tried a water bath with leeks but it does sound like a good plan. Have only ever cooked them a few times, so don't really know any tricks with them.

Shallots are supposed to be sweeter than other onions, true? It's just that they are so tiny When life gets slower, I may make the effort to use them (I'm strictly a home cook so don't have to use stuff if I don't want to - lucky me! ).

Been to Bermuda 6 times worked their 6 monthes, Island is about 21 miles long by 1 mile wide at widest point.
Never saw anything (veg) grown there except Hybiscus and flora, there is not enough land to farm
.Golf courses took over 1/3 of total area of island.
A lot of people think islands biggest industry is tourism, it is not. It's insurance underwriting..
Also when I worked there onions came via containerized freight import.
