![]() ![]() Does anybody know what happens when you freeze lemon curd? I just found myself with about 3 quarts of it leftover from a job. What can I do with so much when I don't have a use for it right now? Also, I have 2 quarts of freshly seperated egg yolks. What can I do with it? Maybe fill a tub with hollandaise and tell everyone to bring the ham and english muffins? ![]()

| Was it properly refrigerated the whole time or was it ever left out of refrigeration? If it was safely stored, I would can those puppies! Kerr is your friend! ![]() I spose you could possibly freeze them. You may experience a texture change but if you do, I'd maye just try to use them in baking like in lemon pound cake or lemon genoise or something silly like that? |

| Actually lemon curd freezes very well, but since you have the egg yolks why not make a vanilla icecream and then fold in the lemon curd.
