| I really want some tips on making a good soy suace reduction for salmon. I want it to be thick and syrupy. Any suggestions? If you simply reduce the soy it gets gritty from the salt. What should be folded into the sauce to achieve the consistency I am looking for???? |

| Sugar! Dissolve sugar into the soy before you reduce. Balance the sweetness with a little acid like lemon juice or rice vinegar. Not only will it thicken better for you, it make a very attractive glaze for your salmon. Slowly, kmf

| Real Teriyaki sauce is actually a soy sauce reduction with soy sauce, sugar and rice wine (added to tone down the strong taste of soy sauce) cooked until it is thick and smooth. I took this recipe one step further and added just a touch of sesame seed oil, minced garlic and ginger and finally toasted sesame seeds and right before serving add minced green onions. It is great with most broiled or grilled meat or portobello mushrooms. ![]()

| Hi nwkevin and welcome to chef talk... Try this out..Sautee a little fresh ginger ,green onion and chopped lemon grass in equel amounts of sesame oil and canole oil When you have a little color deglaze with a little plum wine and saki,reduce just a tad and add a little orange juice consentrate and white pepper..bring to a simmer and add 2 times more water then oj consentrate,simmer again and add a good soy sauce until you get the flavor and color you are looking for, at this time we have not added any salt so taste and make an adjustment if needed,also if you want a sweeter edge add a little honey at this time. make a cornstarch slurry with saki and thicken,careful to add a little at a time as to not over thicken,strain and add toasted sesame seeds,bias cut scallion and orange zest.. cc

| Fine variations all. I like the toasted sesame seed idea a lot and the scallions. It's like I alsways tell people, experiment! scr ew around! make mistakes even ! Just pay until you find something that suits your tastes. Peace, kmf

| Would you use eaual parts soy to sugar and then just a few drops of lemon juice or vinegar? How much would you start out with to achieve enough for at least 3 people? Great ideas...thanks everyone!! |
