Default What a Party!

I didn't share this last week because I was just too nervous. lol We cooked for a graduation party of 100 yesterday. We made potato salad, coleslaw, my bbq sauce and a friend's secret recipe Jack Daniels sauce at home. Then Les and two other men roasted 120 lbs of pork (4 whole hams) and 40 lbs of chicken leg quarters on a large charcoal pit. It was a lot of work and a lot of food but the party went off without a hitch!! Out of at least 100 people to show up, not everyone ate so there are plenty of leftovers.

I just wanted to share. This is the first time we've cooked like this for more than a handful of people at the time. Eventually we'd like to get into catering but this was a freebie to help out his brother and family. We did learn that we need a lot more refrigerator space if we get into catering gigs like this. lol

I've got to smoke some pork shoulders for a church social this coming weekend for about 60 people. Just the shoulders, not all the other goodies that go along.

Good job doing everything for a crowd.

Good Job! Sounds like my kinda party. I love those. Friend of mine does it for his neighborhood block party. A good time is had by all for sure.

Oh I forgot the baked beans! LOL I mixed them at home and then they threw them on the cooker to get a little smoky flavor.

This was good practice for us. July 4th, we have another party of this type coming up for a friend. As far as I know, we'll only be helping with it and not doing all the cooked foods. Les has made up his own rub recipe and I have my sauce so we'll make that to use on the meats. In fact, another secret, I entered a bbq sauce contest and should get the results this week. Wish me luck! lol

Phatch, Les said he doesn't want to do hams like this again. Shoulders are so much better and not as stringy as this turned out to be.

Thanks! The results will be in early next week. The prize is a Primo grill/smoker. There are several combinations the winner can choose. I really need that! lol

We only have a side-by-side so not much space at all. Hopefully, we can get another fridge to go in our utility room or even go ahead and insulate our storage shed and put one in there. We also need a freezer because we don't have one at this time. Thankfully, with Les's job, they run across them all the time and usually just put an ad in the paper and sell them. We can get it free!! Just gotta figure out the best place to put it. Oh yeah, a walk-in would be sweet but not in my small space. lol

Where I am, a residential refrigerator isn't allowed. All refrigeration must be commercial. My health inspector lets me keep my side by side for vegetables only and he checks it each time he's here. Residential freezers are allowed, though.
