| Hello, I'm catering a wedding for 65 people and the bride wants Fettuccine Alfredo. OK, fine. I can do that but my question is, how do I make it all fresh looking again if it has been sitting for a little while waiting for the bride and groom to get to dinner? Do I just stir more Alfredo sauce into it? Any suggestions are appreciated! |

| I'm thinking lightly sauce the Fettuccini or coat the pasta with a little olive oil, keep them warm in a steam table, and just laddle a few ounces more of the sauce right at serving...this is how we serve our daily pasta specials and is good for 2hours max before drying out. But if your not too pressed for time, you could do the above but reheat each individual plate worth on the line. A few good tosses on the pan and its good to go. |
