Default Turmeric in Chicken Stock

What's the purpose of adding turmeric to commercial (boxed) chicken stock? Flavor? Color?

I would say color. Turmeric has a mild, somewhat peppery flavor, but the color is intensely yellow.

By the way, the label on my Penzey's bottle says to use 2/3 of what the recipe calls for as the color of their product is unusually intense.

and it is horrible on top of it.
In my kitchen NO chicken cubes. i get me from the market chickenfat and render it. keeps in the cooler for month if stored properly. if chickenbones have to little meat and fat or for any other reasons the stock / soup is pale, a spoon full of chicken fat. what a color and aroma!!!!!!!

Hi Shel,

Turmeric is being rediscovered as a very healthy spice having possible cancer protecting capabilities. We should add turmeric as much and as often as we can in our food.
Studies have also revealed that turmeric in combination with cruciferous vegetables (cabbage family, broccoli, kale and the like) are very potent in anticancer compounds.
On top, turmeric's action is enhanced with black pepper.

Traditional Indian food which, utilizes a lot of spices like turmeric and pepper, is probably the reason why certain incident of cancers are low in that country .

Just a little blurp on good eating.
