Default Boar

This week I discovered boar meat at a couple of the local farmers markets. I'd like to try it some time. Any tips of preparation, which cuts I should look for, and maybe some idea of what it tastes like?

This one is like pork the way it used to be, but minus the fat. Treat it gently and it will reward you with really deep flavor.

My friends who have smokers talk about how fabulous smoked boar shoulder (butt) is -- low and slow. Gotta cultivate them more.
