| Hello, everyone! I am so glad to find this site, I often have questions and just flounder around the internet looking for answers. I made a homemade corned beef this week. It turned out good, but was very salty for my taste. The recipe called for 1 1/2 cups of kosher salt to 8 cups of water and 3/4 cup of sugar. (and the various spices) My cut of beef was only half as big as the recipe called for but I still needed 6 cups of water to cover. So I cut the salt to 1 cup and sugar to 1/2 cup. Since my homemade corned beef has no preservatives, is the salt a necessary evil? or can I cut it a little more next time? Thanks for any advice, mebco1. |

| Next time cut it down to 1/2 cup if you like. You can always add more when you eat. |
