Default Wine usage

just looking for some general rules for using wine, i made a gorgonzoal asparagus cream sause for some pasta and chicken the other night and left out the rest of the dry white wine ( chardonay ) i think , can i still use it will it matter that it was left out uncorked? any other rules you guy can think of also would be helpful

Ah yes... the ambrosia of the gods!

First, it is not a good idea to leave your wine uncorked overnight. It is also good to keep it refrigerated if you aren't going to be using it right away.

The first rule I learned about wine was that red wines go best with beef dishes, and white wines go well with white meat and fish. When you experiment with wines and cooking, you have to use your palette to know what you like. It's really a personal thing. Try something new. Nothing ventured, nothing gained.

Cooking with fine wines is an art. I'm sure some of the more experienced chefs here can help you out with good ideas. Great question.

I find that drinking the wine and then eating the food always makes the food taste better. In fact, the more wine I drink the better the recipe! I've never had a problem with leaving a bottle uncorked overnight or in the fridge!
