| Does anyone know of a really excellent commercial stock brand? I make my own stocks, i.e. beef, poultry, brown sauce and demi glaces twice a year, BUT I always run out at a crucial moment. I am trying to find a really good commercial product to have on hand just in case. ![]() |

| We use RC Fine Foods. Concentrated anything is obviously inferior to the real thing, but their Demi-Glace and Fruit Coulis are not too bad. RC Fine Foods |

| I ran out yesterday, and veal bones aren't in season right now. I had two packets of Demi-Glace Gold, and used them. Turned out very delicious, but a bit runnier than my homemade ala Escoffier. A bit of reduction solved that! doc |

| Hi Valbeck, I have Miso in my fridge for just those occasions. 1-2 tsp miso in 1L of water (4 cups) for a quick beef broth replacement. In case of emergencies, I brown in an oiled skillet: one shredded carrot, an equivalent of finely minced onions and celery. Cook until brown, caramelized and unrecognizable (not burnt). Add 500ml (2cups) of water and 1 tsp of miso. Bring to a simmer. Strain. Simmer to reduce (or thicken with roux or cornstarch). S&P to taste. Luc H
