| I'm looking for ideas for vegetarian sandwiches that are interesting and they need to be relatively cheap. I only charge £1.50/head Aprox $3 I've come up with Cheddar, Carrot & toasted pine nuts And cheddar celery and cashew nuts Both mixed with just enough mayo to hold them together . They both have finely chopped spring onions too They are quite popular, particularly in wraps. Just cant get the vege juices flowing as far as sandwiches are concerned.

| bughut in India we get tomato, cucumber, and sliced boiled potato sandwiches with a spicy cilantro and mint chutney - they are absolutely yummy!

| Sorry forgot to mention I do a grilled vege wrap in the cafe - grilled asparagus, peppers, courgettes, onions, tomatoes - dressed with garlic, chilli, olive oil, lime juice and cilantro dressing and topped with a cheese melt - they are really popular

| Bughut - if you look in the recipes forum, there might be some suggestions in Shel's thread about Peanut Butter sandwiches that may appeal. Just a thought ![]()

| Hummus!! Fresh mozz, tomatoes and lettuce cucumber and cream cheese pb & j specially done as in toasted special bread and an interesting jelly peanut butter, hot chiles and ginger and Vietnamese pickled veges gado-gado in a wrap Recipe: Gado-gado (Cooked mixed vegetables with peanut sauce) the last 3 are my ideas Last edited by AndyG; 09-09-2007 at 05:57 PM. |

| Our veggie sammich: Kalamata Olive tapenade, roasted peppers, grilled zucchini/yellow squash, grilled eggplant, grilled portabella on a tomato foccacia roll. |

| Radish, cottage cheese, garlic chives on rye Shredded beetroot, grated carrot, orange dressing, salad greens on multi-grain Avocado, shredded lettuce, lots of black pepper, shredded red onion on sourdough Sliced boiled eggs, avocado, lettuce, spring onions, mayo on multi-grain

| hummus and cucumber, lettuce tomato and anything else you might like ricotta mixed with fresh herbs (parsley, chive, thyme, perhaps) and rocket or arugola or whatever it's called in english - or if you can;t find it, radishes not mixed in, but sticking out so you can see it for color and texture contrast a really good egg salad with celery, carrot, parsley, capers and decent mayonnaise with slices of avocado or tomato or sprouts or any mixture of the above in the sandwish for contrasting taste and texture and color |

| whole grain bread, toasted with grilled haloumi,roasted aubergine, and sprouts or tortillas or wraps, stuffed with tahini,sunflower seeds, cucumber sticks and micro greens and rolled tightly, then cut on an angle or open sandwiches with avocado, marinated fetta cheese, red onions, finely chopped celery and cherry tomatoes or crusty bread rolls, with cooked tomatoes, mozzarella cheese and marinated mushrooms and served hot and gooey or mashed egg with mayo and celery and a tiny amount of curry powder and then have crunchy salad stuff in a wholegrain bread or mashed garlicky pumpkin (made in to a spread) with walnuts,sprouts and sliced tomatoes or cream cheese with dates and walnuts or chedder cheese grated and mixed with finely chopped onion thats just some more ideas for you , got loads more rattling around if you want them |

| Are they fresh to order? If so, we made portabello sandwiches with a breadcrumb cheese (parm?) mixture on top, arugula, tomato, and ciabatta brushed with oil and balsamic glaze. It is crunchy and SO good. I'll tell you the truth, I'm forking sick of grilled squash; it is the default veg sandwich everywhere and I would be happy if I never ate one again, or had it in pasta salad. |

| I'm really pleased with all your lovely scrummy ideas. It's cold sandwiches im after that can be made and delivered to board room meetings/training sessions etc. Keeping in mind there's always a quota of fuddy-duddies who just want a cheese sandwich and " none of that poncy cheffie stuff" Mind you they're the same folk that cant get enough of samosas and pakoras with chilli dip and quails egg & haggis scotch eggs ?? There's no accounting for folk. We never know who we're feeding. Bombayben : Tried your tomato & cucumber one on the family. Not sure if it should be layered or mixed...Does it matter? AndyG : Whats pb & j Avocado seems to be theme throughout. Love the ideas, but do you not have to worry bout it discolouring over an hour or so, even with the addition of lemon juice? Tessa : Your egg and celery sandwich is going on the menu tomorrow. It's a fab mix of taste and textures Thanks... | Okay so with the cheese I would guess that it doesn't need to be Vegan. On that note how about roasted eggplant, roasted Pablano pepper, grilled Portobello (gills removed of course), mache, tapanade (minus the anchovy) and Montrachet (whipped with fresh herbs and or roasted garlic) on a toasted Focaccia roll. Then there's the old stand-by Veggie burger. Can't find my old recipe but coarse chopped veggies of your choice, wild rice, whole wheat flour and egg to bind. If you want to loose the egg use a veg stock for moisture but that never seemd to work as well. Not being vegan (or vegitarian for that matter) I never really looked into what would be a suitable "Healthy" alternative. |
