| My guy loves sweet potato casserole. I want to make it for him this weekend. I want to make a special dinner for him. What else would you make with it? ![]() |

| A good sweet potato casserole will go with just about anything except fish but the two main meats that we serve it with is turkey and pork; pork being my favorite. I love a baked center cut pork loin with the bone left in; I have my butcher cut it with a nice top layer of fat. Dry bake it in the oven to an internal temperature of 150°F. Remove it from the oven and allow it to sit for at least 10 minutes before slicing. It will coast up to around 155° and the fat layer on top will be very brown and crisp and the meat will be tender and juicy. Serve it with a nice salad and some crusty rolls. End the meal with brandied strawberries toped with crème fraiche.

| i dont know if your guy likes fish but a honey soy glazed halibut pairs well with sweet potatoes |

| My guess is pretty much the standard sweet potato casserole. Sweet potatoes, butter, brown sugar, marshmallows. Personally I'd go with the pork roast instead of the fish.

| Yum, pecans would be great! I don't add much sweetening since the sweet potatoes don't need much. I use just sweet potatoes, butter, a little maple syrup and salt. Maybe it's then not called by the same name? |
