Default Sweet Potato Casserole

My guy loves sweet potato casserole. I want to make it for him this weekend. I want to make a special dinner for him. What else would you make with it?

A good sweet potato casserole will go with just about anything except fish but the two main meats that we serve it with is turkey and pork; pork being my favorite.

I love a baked center cut pork loin with the bone left in; I have my butcher cut it with a nice top layer of fat. Dry bake it in the oven to an internal temperature of 150°F. Remove it from the oven and allow it to sit for at least 10 minutes before slicing. It will coast up to around 155° and the fat layer on top will be very brown and crisp and the meat will be tender and juicy.

Serve it with a nice salad and some crusty rolls.

End the meal with brandied strawberries toped with crème fraiche.

Betty and Fuego are disagreeing.

I am wondering what the ingredients are in this sweet potato casserole.

My guess is pretty much the standard sweet potato casserole. Sweet potatoes, butter, brown sugar, marshmallows.

Personally I'd go with the pork roast instead of the fish.

I've been following this Sweet Potato Casserole recipe for about 3 years. It always is a hit.

Yum, pecans would be great!

I don't add much sweetening since the sweet potatoes don't need much. I use just sweet potatoes, butter, a little maple syrup and salt. Maybe it's then not called by the same name?
