Default Green Eggs and Ham

Yep, that's what I want to make Bobby Flay did this on an Iron Chef bout but I didn’t catch how he made it. Can anyone help out? What did he put in the eggs to make them green?

i missed that iron chef, but i bet it was interesting. i would think that some form of a parsley butter would work well or if your looking for more of a woodsy flavor maybe a basil or spinach puree you might suprise yourself at how little a spinach butter would be needed to turn scrambled eggs green. i enjoyed a st. paddy's day event in butte mt. and i used blanched spinach puree with pepper and parm for the green eggs. i have also heard of food coloring but i don't dig eating that. goood luck

As I recall, the eggs weren't really green. Instead he made a sauce verde, and topped it with a fried quail's egg.

My children never understood the book, never saw any humor in it.
They always had my canned green italian frying peppers in their eggs......... they thought eggs were supposed to be green.

Come to think about it, I don't recall them being all that green either. Oh well, I want mine as green as I can get them
