 Cajun/Creole Hi... Just wondered if anyone knew of any authentic Cajun or Creole recipes. I want to learn the "down home" stuff not too modified. Any help?      |

| Authentic is no one thing. Every family cooks those things differently from every other family. Yet each is authentic. I recommend getting some Paul Prudhomme books from your library and starting there. He's easy to follow and his results are decent. Others will be along to provide their favorites. Phil |
