Question Recipe for Cuban-style bread?

We're planning for guests next weekend, and picked out a recipe for Cuban-style pork shoulder from Bruce Aidell's Complete Book of Pork.

It would be nice if I could find or make Cuban-style bread, which i greatly admired when visiting Havana in the pro-Castro days. It's light and flavorful with a crisp, thin crust. I've seen it in Chicago-area Cuban restaurants, but the only one I know about nearby closed several years ago.

Got a recipe or suggestion?

You might want to check The New York Times cookbook, first or second edition. If I recall correctly they had a very good, simple to follow recipe for Cuban bread.

GREAT!

I just happen to have the first edition of The New York Times Cookbook and there it is, on page 462. The recipe is attributed to James Beard, but it's a little different from the recipe in his Beard on Bread which Big Jim describes as a Mediterranean-style bread and just sort-of Cuban.

There's not much to the recipe, so I will run one up early this week and see if it's like what I enjoyed in Havana in the pre-Castro days. I was especially partial to the Especial sandwich at Sloppy Joe's Deli and Bar. It was a two-inch thick slab of assorted cold cuts, cheese, and pickles which shaped my perceptions of what a sandwich should be for the rest of my life. It cost a dollar US, which was a lot for a sandwich in the 50's. God knows what they made the cold cuts out of.

Hope it meets your expectations! As I recall it is a good bread, some body and for such a simple recipe, very tasty!
