Unhappy Pizza Dough Consentiency Help

I have cracks and gaps in the dough. Its not one single ball why is that happening? Is it OK?
It also happend when I make and I get folds in the bread crust!

Could you be a little more detailed? What do you mean by cracks and gaps and "not in a ball?"

Are you using too much flour on the crust before you bake it? Sometimes it can lead to "folds" in the crust.

Carl,

If your bench rising the dough, make sure you cover it with a moist towel. I have a feeling your dough is drying out during the rise process. Typically when I bench rise my doughs, I place a piece of oiled parchment paper over the top and then the moist towel.

THANK YOU AGAIN OLD SCHOOL (Youre like Batman w/ the Bat signal )
Here is the detail:
I make the dough in my kitchenAid w/hook.
It comes out smooth but when you shape it or put it in to a ball
it shapes, but has deep cracks or folds in the dough. (it looks like a fist top side smooth bottom side folds, just like your fingers an I cant meet them to make it smooth)
and then no rise.
PLEASE DONT waste your time and write anthing long just point me to a sight that might help!!
