Question Orange/Golden Cauliflower

Where can I find the detailed nutrition values per gram (or per ounce or per serving) for orange cauliflower?

I've searched Google, but all I have learned so far is that orange cauliflower has more nutrients and is beta-carotene rich with 25 times more vitamin A than the white variety. I'm looking for a list of the carbs and sodium as well as the other vitamins.

Hello Vera,

You should consider different colour foods as the same as the original food but extra in one or 2 things, meaning orange cauliflower is the same as white cauliflower but with extra yellow colour which is vitamin A.

As for what the orange/yellow cauliflower has more of, this is a reliable source:

By the way, beta-carotene is a yellow/orange pigment that is converted to vitamin A in our bodies. To aid at absorbing the beta-carotene, I suggest you consume your cauliflower with added olive oil (of vegetable) because the pigment dissolves in fat/oil not in water.

If anyone gardens, just wanted to say that the orange cauliflower called "cheddar" in the seed catalog grew amazingly well for us this year, and we're thinking of making it the only cauliflower we grow for next year.

FWIW, green cauliflower has been around for quite some time. Some stores here call it "boccoflower." Yesterday I saw a nice display with purple, red/orange, green, and white cauliflower with a large mound of broccoli behind it. Using all those veggies would make a nice, healthy, colorful dish.

I especially appreciate the tip about Vitamin A being fat soluble, Luc.

I've been blending orange cauliflower with potatoes (50-50) to add a colorful vegetable without changing the menu or plating. It cuts the starchiness of plain mashed potatoes and looks much more appealing on the plate with sautéed spinach and roasted garlic.
