| | Special Meal Hi my name is Carl Yorke and I recently joined Chef Talk really to try and become a better chef, I have been cooking for 6 months or so, so still learning!!
My wife has her 50th brthday on 21 Nov and I really want to make it a special evening by cooking a really simple dish with with Fish, can anybody help me with a simple recipie

| | I'm thinking a Zuppa di Pesce or Paella, but with nice big fancy seafood in there, like big hunks of king crab, scallops, huge wild shrimp or prawns, etc., so made quite high-end and decadent. But I've gotta run at this moment.
Is seafood ok, or were you after fin fish only... |

| | I just made fresh halibut last monday....was pan searred in a cast iron pan with olive oil, finished cooking (4.4# thick hunk o fish) in the oven......melted butter added sliced almonds, fresh chopped parsley, dillweed, lemon juice and salt.
was a hit.
You can pretty much cook any fish filet in that manner.
Paella is alittle fussy if you just started cooking. |

Boy, I bet a google search for 'poached salmon' would turn up a few gazillion recipes.

| | Just for grins I did a google search, got 1,440,000 hits for poached salmon. Tea cured salmon, however, was a different story.
Salmon and steamed asparagus would be a nice meal, with Bearnaise sauce splashed on both. With your limited cooking experience, making bearnaise from scratch could be a daunting task - you could end up with a puddle of greasy scrambled eggs. A very tasty puddle, mind you, and there are times when that could be a good thing, but for your wife's 50th birthday you'd probably want it to stay together as a sauce. There are some packaged sauce mixes that somewhat approximate the real thing and are pretty simple to prepare that could provide a nice accent to your meal.
