| Hi I'm curious, what are the main ingredients in most Greek style seasoning packages? I like them, but I want to be able to rub chicken with them and I don't want all the salt. What should I start playing around with to get something that tastes even remotely "authentic"? Also...how do I prevent chicken from drying out? My chicken dishes always seem to come out so dry unless I cook them in a ridiculous amount of butter, wine and garlilc (which is good, but I can feel my heart screaming for mercy after I eat it). |

| Oregano, rosemary, onion, garlic. Use some lemon juice on the chicken. Are you using a thermometer and taking into account the carry over heat? |

| Most of the commercial greek seasonings inlcude oregano, rosemary, salt, BEEF BOUILLON, MSG and other less desirable things. To make your own, the seasonings abefroman listed are good though you could also add mint to the list. In a similar vein, you might try za'atar a seasoning blend from a couple of countries over on the map, but still very good and usually less scary in the contents. Phil |
