Default Holiday salad dressing

I'm looking for something different for the salad this Thanksgiving.

I've had Cranberry and orange vinaigrettes before so I'd like to skip those and expand the field a bit. My wife is a big fan of my black and balsamic vinegar dressing with pomegranate seeds in the salad. But we do that off and on throughout pomegranate season.

I'm open to creamy, ethnic or most anything.

I was looking for something seasonal and festive. Most of my vinaigrettes citrus based. It is citrus season but I'm looking for something different.

Do you have a vinegar recommendation? For example, a good red wine or white wine vinegar? I don't use either of those very often compared to rice vinegar and cider vinegar so I haven't explored that much nor do I recall any particular recommendations on wine vinegar in books or media.

I do have a small bottle of champagne vinegar which I enjoy for it's comparative lightness yet more complexity than rice vinegar.

Sherry vinegars can be nice ... I've enjoyed a few nice Spanish sherry vinegars. There's a thread here Vinegars... on vinegars. Maybe it'll offer some ideas.

What kind of greens are you dressing? How about a rift on Hot Bacon Dressing? Sherry vinegar slightly sweetened with a mix of brown sugar and honey, just a hint of bacon and bacon fat, walnut (or other nut oil), served slightly warm, and then toss the salad with roasted pecans or pistachios.

One of my favorite quick dressings in a bit of mayo with some raspberry vinegar mixed in and some pepper. If you get a cool and different flavored vinegar, that might be nice! I don't coat my leaves in it, I just use a little bit.

It's good with red wine or champagne vinegar too.
