Does anyone have advice / recipe for smoking a goose?

I don't think Bamboo make paper big enough for that.

Seriously, handle it like a turkey. Us a dry rub liberally all over the bird. Let it sit until a pelicle forms. Then use off-set heat, trying for about 225-250F.

I've only done wild geese, and they take about 4 hours if you're cooking them totally in the smoker. You'll have to adjust if your using a much fatter domestic goose, or if you're going to partially cook in the smoker, then finish in the oven.

I hope this isn't too off-topic, but I've wondered about doing a duck thus in my weber - prick skin, steam it, then finish it upright in the weber, coals on the sides but not the middle, with some hunks of soaked hickory.

Beer can duck!

Anyone ever heard of such a thing?

How to Grill: The Complete Illustrated Book of Barbecue Techniques by Steven Raichlen

.......has a recipe in it that is pretty much just what you describe. I don't want to hijack the thread with conversations of duck in what oughta be goose-themed. Alas, I have never tackled a goose, in any sense.
