Arrow The Uses of Sour Tastes

I am writing an article on the use of sour tastes in food. The article will have a scientific bias, and I would very much appreciate information from professional chefs about how they use sourness in their made dishes and in the sequences of dishes that they serve (e.g. as palate cleansers). All sources will of course be acknowledged unless they wish otherwise.
