Default Toutière for X-mas

I am getting ready for x-mas. I just finished baking a couple of tourtières. In Québec, they are traditional for Christmas dinner. Many purist would see these meat pies and say they are not authentic. The tradition varies from region to region.

Tourtière is basically a meat pie. These are mainly beef and pork with diced onions and potatoes with the traditional Christmas spice blends of Allspice, cinnamon, cloves (and black, white pepper, coriander, mustard and thym).

Some will argue that authentic tourtière is more like a wild game stew (partridge, moose, deer, rabbit, etc) slow cooked with onions, potatoes under a pastry dough.

I usually make a couple traditional ones and others I call <mexicain> which omits the spices above but I add frozen corn, chili powder, chili sauce, cayenne and some hot sauce. (We enjoy those well after Christmas since these pies freeze very well)

Every year I get compliments on my crisp cut steam holes. There is an easy way and a difficult way to do these. This year I decided to have fun and show off my steam hole making abilities a little...




The specks on the LH monograh pie are flax seeds. Since I am always making cooking experiments to come up with the best, I have to find a way to ID my trials. I added flax in this trial crust.

I don't mind sharing the recipe. It's a long process tho!
I don't have it written down in my PC.
