Default Flavours for a sauce

hi all,

i am trying to create an unsual sauce for black cod. and i would welcome any ideas on flavours that goes well with black cod..

Firstly, this post ins'tgoing to be very informative, but its the best I got..

I was going through our recipe cards at work the other day, and we have a special which we havent run since iver worked there, but its a miso-glaze for cod. i remember it had ginger, scallions, cremini mushrooms and white pepper. if you have the time, play around with those flavours and see what tastes good. enjoy!

P.S.- after reading my post, maybe peanut sauce would add some interesting flavour to that.. just a thought

thanks, any ideas are welcome..

i might try that.. i was think of doing a classic hollandaise but using clarified butter infused with shellfish, and put it through a creamer whipper for a lighter texture...
