| just wondering if anybody else is doing this. The theme for this year is healthy. Any suggestions on what to make would be nice as well ![]() |

| think of using herbs, veg/fruit for sauces to limit oils.....healthy generally means lean meats, lots of veg, some fruit, whole grains.... Poaching is generally a lower fat technique Check out various heirloom grains, beans....... A poached bosc pear with caramel sauce and an amaretti cookie would be my version of a "healthy dessert" Whatever you do, make sure you can tell them why you think it's healthy....and how you adapted to get your dishes.....maybe do a nutritional info at the end....MOST important thing is to practice, practice, practice...so you have it down pat....no surprises, a good flow, good comfort level..... I've known Master Chef's that have put in alot of time for pairs competition..seriously, even the best practice a bunch when it's necessary. |
