Default Johnson and Wales Chef of the Year contest

just wondering if anybody else is doing this. The theme for this year is healthy.

Any suggestions on what to make would be nice as well

think of using herbs, veg/fruit for sauces to limit oils.....healthy generally means lean meats, lots of veg, some fruit, whole grains....

Poaching is generally a lower fat technique
Check out various heirloom grains, beans.......

A poached bosc pear with caramel sauce and an amaretti cookie would be my version of a "healthy dessert"

Whatever you do, make sure you can tell them why you think it's healthy....and how you adapted to get your dishes.....maybe do a nutritional info at the end....MOST important thing is to practice, practice, practice...so you have it down pat....no surprises, a good flow, good comfort level.....
I've known Master Chef's that have put in alot of time for pairs competition..seriously, even the best practice a bunch when it's necessary.
