Default Ahhh....

It's a cold, cold winter evening here in Salt Lake City. I'm spending time at home working on catching up on various things after the Christmas holiday. Dinner turned out to be just right.

Cut up a red onion and a sweet Vidalia, threw in a good pinch or three of salt, cooked in butter over low heat for about an hour. A healthy splash of white wine went in, reduced, then added about two cups of some home made beef stock. A dash of sherry, a splash of worcestershire, a grind of pepper, simmer, then topped with a romano - parmesan cheese blend when the soup was in the bowl.

Holiday stress is behind me, my belly is happy and warm.

Life is good.

Sounds wonderful! I always forget to use Worcestershire. I think I'll transfer it from the gallon jug to a smaller container and keep it near my stove. Thanks for the reminder.
