If I had the money, I'd take dual fuel. I like gas on the cook-top and electric in the oven. I think that electric holds a more constant temp, heats quicker and is easier to clean.

I have experience with two dual-fuel models, Garland and Five Star, both are commercial/residential models. I will never buy another electric oven!

Contrary to my previous gas ovens, the temperature control on both of the dual-fuels have been inconsistent and unreliable. The most recent (Five Star) can be from 50 to 125º off, depending on the temperature you set. And once a temperature is set, the oven can vary by up to 75º during its cycle.

I imagine there are some good ones on the market, but after my experience with two rather expensive models, I plan to go back to gas in the near future.

I bought a dual fuel cooker for the business 6 months ago. Even though its not a commercial model, I'm really pleased with it. It's a Kenwood CK404 double electric side by side ovens 1 metre wide. The larger of which is fan assisted. 5 burners the middle one is a high flame wok burner which is essential for me. We dont have on-line gas so i used the converter that came with it and use propane. Which is lasting forever. It's solid and easy cleaned (On legs so you can clean underneath)
Ispent the first 18 months of business working with electric hobs and HATED it. I probarbly should have bought one with a commercial warranty but i cant afford those prices right now. I payed £700 online $1400. Good luck with the hunt
