| Does anyone know when white salmon is available? Also a source where I can by it would be appreciated. Thanks, Jacky |

| Ivory salmon is what you are refering to....it is one of my favorite products...first you will have plenty of time to research this topic because the season just ended. The US quota was 11,000 fish this year and that was reached by the end of June. The Canadien quota was just reached. What makes this fish so good and so white.....for me its the oil content...this is a moist fish with oil contents competing with such long river fish as Copper River salmon. And what makes it white is what makes it oily. The Ivory salmon have a primary diet of herring.
