| perhaps im ignorant, but my feeling is that if a salmon is used for sushi, then perhaps the best would be from contract fisho's. If they are curing the fish, then to my knowledge, it then becomes more towards a gravlax type product rather than a sushi. |

| We sell a sushi grade salmon.......there is several companies in California that sell sushi grade products across the country. Call LA Fish in LA (213-629-1213). |

| finding sushi grade fish isn't easy.. I buy my sushi fish in a certain place where I know exactly when they get the fish. still you might find the article on sushi grade fish in my website useful.
