NO MATTER WHAT I DO
when I fry or saute the oil collectes to the side of the pan closest to me!
I have ALLCLAD 12 in saute
AND CHECKED IF MY STIVE WAS LEVEL AND IT IS
WHAT AM I DOING WRONG!?!?
Do you have either an electric stove with exposed coils or a gas stove with cast-iron grates over the flames? Even though your stove(top) might be level, those might not be.
Also, even All-Clad pans aren't perfect (heresy from an AC lover like me!) -- it could be that the pan is ever so slightly warped.
Maybe if you try using less oil, you won't have it collecting.

Oil will always go to one side of the pan. A very very very slight tilt will send it to one side of the pan. Such is the nature of oil. I wouldn't worry about it if I were you.
But seriously, would guess from what the others say, the pan and/or your hob is not level.
I've just moved house and have had to adjust where I place my pans on the hobs for best results. Each situation is unique - go trial and error and find the best spot for that pan.
