So much coconut! After learning to eviscerate a coconut to make a pretty damned good coconut chiffon with coconut cream cheese frosting for the chef I'm pretty stumped as to what to do with the rest of the coconut. I have a couple handfuls of fresh coconut meat and about half a can of coconut cream left. Anybody have a good simple and savoury recipe to recommend? I'm thinking maybe a good Indian or Thai curry or a coconut crusted fish/shrimp but any other creative and tasty ideas would be appreciated.
