Question Salt & Pepper Ribs

I was just wondering if anyone knew a good recipe for salt and pepper ribs. the recipe i have got is:

1.1 kg Pork Ribs
2 tablespoons salt
2 teaspoons ground black pepper
1/2 teaspoon 5 spice powder

stir fry the salt and pepper until the salt darkens
add the 5 spice powder
rub in powder mix into ribs
leave in the fridge covered for several hours
deep fry at approx 185 C for approx 5 mins
cool
refry at 185 C for approx 1 min



The question i have is about stir frying the salt and pepper. what exactly is this? do i need to add oil? or just shake it around on a med-low heat? also i have tried this method (of shaking it on a med-low heat) and the salt never darkens.

other than this they taste really nice. obviously not good for you, but tasty for a one off
