| I made a nice smoked-salmon quiche using Costco's salmon and the basic quiche recipe from Best Recipes by Cook's Illustrated. It's basically an egg custard. Do you think I can freeze it? Thanks Mike

| Yes, but be aware that it might get a bit watery when you thaw it out and heat it up. So you might want to reheat it from frozen, at a lower temperature than you would use to bake it.

| For future what you can try assembling the ingredients and freezing them. When your ready thaw them and bake the quiche. I have done this several times and the results are not bad at all.

| Thats a great idea Nicko. It's such a finicky business making a quiche. If the pastry and fillings are already prepped it's going to cut down on the time. I've never liked the texture of the filling after freezing a complete quiche.
