Default boiled chicken uses

I made a load of chicken stock yesterday which included a whole chicken I pulled out before it was totally drained of flavor. Usually I use it to make chicken enchiladas or chicken pot pie the next day, but I'd like other options. Any good ideas out there?

chicken salad, chicken soup, treats for your cat or dog, use in salads (not the same as chicken salad), chicken croquettes, chicken sandwiches, mix with BBQ sauce and make open faced sandwiches, use in fritatas, quesadillas ....

My grandmother used boiled chicken to make kreplach- "Jewish won-ton"- with noodle dough. Squares of dough were filled, folded into triangles, and simmered in the soup. She'd add chopped gribenes (the fried skin bits left over when making schmaltz) and maybe some sauteed onion.

Something where the texture is as important as the flavor? Maybe a spicy dish where chicken isn't the main flavor?
