Question A Many Layered Onion.

Hey y'all I've been cooking with onions and since I hate wasting, I always use every part minus the outside flaky skin portion. My question follows: is there any difference between the inside of an onion (the core) and the outer (leaves i guess) of an onion? I am always averted to eating the inner-most portions as I find them to be more pungent, is it "all in my head"?

Also, is there a thread which breaks down the different kinds and properties of onions?

Thanks! Y'all are awesome!
