Hi Luc,

I used to do that sort of thing all the time (I suspect it had something to do with with my courtship leading to marriage!). Chef Michael Smith used to do a "tart" at the Inn at Bay Fortune where the crust was bacon! Good stuff!

I can't count how many culinary splurges I made in the name of courtship....!
(But a man's got to do what a man's got to do to make things happen....)

A great idea, with lots of ramifications.

Wonder what would happen with slices of round pancheta, for instance"

Gonna do some experimenting on my own.

gotta try that idea Wonder if the bacon was stretched really well first if there'd be so much trouble with shrinkage...
