Post Looking for some input.....

I was playing around with some flavor ideas in my head, and came up with the following. Please feel free to rip this apart or praise it at length.

Smoked Potato Salad

3 pounds russet potatoes, peeled, diced and smoked.

3 Bermuda onions julienned, and carmelized

3 large red peppers, roasted, peeled and seeded, one inch dice.

1. Cool all ingredients, and combine in large bowl.
2. Toss with 1 tablespoon fresh rosemary.
3. Toss with a balsamic vinegarette.

What does everyone think?

Flavor combo sounds great, but Im concerned about the appearence of the potatoes. I think smoking them will turn them a very unappetitizing color of grey or off yellow. Try smoking the onion and the pepper instead.

Smoked potatoes!!!!!?????
is that all you have been smoking???????

Now smoked red pepper or smoked tomatoes these are fantastic ingredients to cook and blend with.

let us now how the potatoes go.

by the way russet burbank is a frying potato, why not use a soft mashing potato instead.
how about leaving the skin on and peirce the potato with a skewer then steam until done then give them 20 min of hot smoke,let them cool slightly and peel the skins away. This should give a more subtle smoke flavour and aroma. peter
