Default Storing Boiled Eggs

How long can hard and medium boiled eggs stay in the refrigerator while in their shell? What about if they've been shelled? Any tips for storage? Is it better to use Grade AA eggs or Grade A eggs?

no longer than 3 days, 2 days if its been mashed with mayo or milk

Since first reading your message I did a search and found numerous citations indicating that boiled eggs in the shell can be safely stored for one week in the refrigerator.

Greek Easter was today, and to celebrate we dye hard boiled eggs a very rich shade of red. I've always kept hard boiled eggs in their shell in the refrigerator for up to a week.

But I just found out my inlaws keep their hard boiled easter eggs all year for good luck, on the counter, not even in the refrigerator... and eat them! That tickles my gag reflex but they've been doing it for years and seem fine. In fact my husband puts a hard boiled egg in his pocket in the morning and eats it as a snack after work.

If you peel the eggs and put a little white vinegar in the water that they are stored in (10% by volume), they will keep indefinitely, maintain good color, and not "soften" like they do otherwise...
