Default Crepes question

I'm going to be making a dessert recipe with crepes. I've never made them before but I want to have a go at it. I'm wondering...I really like to do stuff ahead of time. Can I make the crepes themselves a week before and seperate them by wax paper and put them in the fridge? or the freezer? What is the best way to do this or should it be done at all? Any help would be appreciated. Thanks

I wouldn't do it more than a day ahead, and even then, you'll get some drying and cracking.

Also remember that my average humidity in Utah is extremely low so I might be an extreme case.

Default retired former 80 yr. old chef

At a hotel I worked at a few years ago we served a popular Sunday Brunch. When service shut down saturday nights, Chef William, the 80 year old man who was the chef at the same hotel 2 decades before would come in ready to take over the line once the evening cooks had the place closed and cleaned-up. Chef William would sit his old, stooped frame squarely on a stool w/ wheels and roll himself up close to the flat top and proceed to make crepes by the hundred for us to use for the next morning's brunch. Always my pantry staff would fight to see which 1-2 of them would get to stay and work a few hours of OT standing alongside of elderly Chef William to be his go-fer and to watch, talk with and assist him with any needs he might have during the wee hours. Oh- the stories he shared with them!

My point? Chef William was a tremndous help making these crepes the night before- but I don't think it would have worked well if he'd made them days in advance.

I've frozen them stacked between wax paper, works great. Also, in France don't people buy a stack for home and keep them a week+ in the fridge?
