Default uses for gelatin

hello evereyone,
I am looking for help in using gelatin to thicken up razmataz. I want it thick enough to hold itself and something else with out collapsing, but not enough to kill thr taste of the strawberries themselves. are there any suggestions on the ratio of gelatin to razmataz?
Any suggestions would be great.
