| hello, i am planning a nice meal soon, as soon as i can get some money but i was wondering, i want to stuff some boneless skinless chicken breasts with a bunch of maranaited red/green/yellow peppers, what i'm wondering is will me grilling the chicken with the peppers inside, kinda steam the peppers and do you think this would taste well?thank you |

| I don't see the chicken helping the stuffing, nor the stuffing helping the chicken in this particular case. I think you'd do better to cook the breasts some other way, then serve with rajas Here's some Googled ideas: rajas recipe - Google Search |

| I agree with phatch. I like peppers and chicken is my preferred meat but your proposed dish just doesn't seem appealing. |

| ok so do you think it would be better, to just have say a bed of peppers with grilled chicken on top, with maybe some sauce drizled on top? also with the sauce, i was thinking some kinda tomato sauce mixed with italian dressing, would those 2 go together well or not really |

| Why don't you try this, Instead of using Italian Dressing in the sauce, marinate the breast of chicken in some olive oil, garlic, rosemary & oregano.( all preferably fresh but dried will do) Let Marinate for at least a couple hours. Next I would make a nice Pepperonata Sauce (plenty of recipes on google) which is basically your mixed peppers in a tomato sauce and cooked down. Some of my personal reccomondations when cooking: DO NOT use salt in your marination it will remove moisture leaving you with a dry rubbery piece a chicken. Do Not use any acids in your marination (ie. italian dressing, lemon juice) it will start to cook your meat before you cook your meat When BBQing season with fresh ground pepper only after you remove the meat from the grill. Pepper burns leaving a bitter taste. |

| I think you'll get the most out of your dish by reconfiguring your flavors. I would also marinate the chicken in your desired seasonings and grill simply. As for the peppers, cut into long slivers, toss with oil and seasonings, and pan roast. Serve together. In answer to your original question, yes the peppers would steam in the chicken, making it very difficult to cook evenly. |

| i was thinking about ng olive oil instead of italian dressing, but i've never had olive oil before, guess now is as good as time as ever to try so to reconfigure this dish, we have boneless skinless chicken breast stuffed with julienned(sp) red, yellow, and orange bell peppers, the peppers being marinaded in a olive oil, ground pepper and oregano, should i season the chicken at all?? and does this seem like a better dish then the original |

| Here's a thought - sandwiches. Sort of a grilled cheese or panini type thing. Sweat the peppers in a bit of olive oil or butter (or a mix of the two) with some oregano, basil, the usual italian type stuff. Saute thin slices of the chicken. Layer the peppers and chicken on bread with some grated gruyere, fontina, mozzarella, whatever meltable cheese you prefer to make your griled cheese sandwich. Serve with a simple greens, shredded mushroom, grated parmesan salad or a classic ceaser. mjb. |
