| Hi There I work a breakfast shift where i work and part of the job is a breakfast buffet. since I've been cooking i worked all nights so my ideas on breakfast skills are not all that great. now of coures i have to use the basics scrambled eggs, french toast,pancakes, beacon, but im aloud to use 2 or 3 dishes of my choice. so im open to all ideas. |

| Here's some ideas: Baked Cheese grits; creamy smoked gouda polenta; Sausage gravy with biscuits; hash with biscuits; gooey cinnamon rolls; roasted hash-browns (w/red potatoes and sweet potatoes, and onions); peach schnapps french toast; roasted fruits; mix cream cheese/smoked salmon/dill with scrambled eggs; mango/pineapple salsa; sliced tomatoes and/or roasted asparagus; fried green tomatoes (or fried squashes); breakfast casseroles; fresh cut pineapple and other fruits. | I think strada is a great item for an buffet. It's so easy, it can be assembled in your hotel pan the day before, plus it holds well in a shaffer. You can dress it up or down. For instance, brie and chive, spinach and tomato, denver, etc... it also can go Mexican, Italian...different herbs, different meats change the whole thing you could make it different 365 days a year. Other well liked items... make a chaffer of a french toast caserole not individual, many flavor ideas or just ad some almond paste or sauteed pears crepes too many to list... or simple blinzes potato caseroles (like scalloped), again it can be preassembled and any fillings work (there's a couple housewive type that are terrific) Quiche, bake the whole thing in your hotel pan. Love mushroom strudel or any veg. strudel Stuffed mushroom caps Stuffed tomatos Scotch eggs, hard boiled eggs wraped in sausage, deep fried rarebit au gratin Chaffer of corned beef hash with eggs baked into it in a pattern Try looking at Pillsbury on line, they have put out tons on recipes of brunch items that are simple and classic. Martha S. has some good breakfast ideas also. Do you have to make any sweets?

| How big is the buffet? How many people do you serve? Someone said crepes. They are a great idea. You can make both savory and sweet. If the idea of turning out tons of crepes constantly drives you batty, don't worry, both Sysco and Alliant have a frozen crepe. They are definately not on par with fresh made, but they are a pretty decent product. I use them in the catering business, because there is no way I have time to bang out thousands of them every few weeks. Also, I love to make jellies, jams and condiments. The nice thing about this is that you can make them weeks ahead, and I think that they give a little something extra to buffets. Good luck!!!

| Hi there im sorry i forgot to say where i work and size of the buffet. i work at the fairmont newfounland a city hotel in st johns and i have a total of 5 to 8 hot iteams on the buffet. your normal buisness is anywhere from 30 to 200 people depending on the season we are mostly a buisness class hotel. so far the ideas are great would like to recive some recipes. thanks brian p. |

| Brian , what about truck stop style heuvos rancheros. all you have to do is make eggs benedict, but instead of hollandaise, just open up a jar of pace, heat it up and pour it over the eggs, these keep pretty good in a steam table, but I wouldn't want to leave them there for a couple of hours. Oh, and Kimmie, when did you say you were cooking breakfast ?.

| Hi brian.nf: What do you think about. .spinach and salmon muffins .mini quinoa pudding grated with cheese .Also you can make crepe roulade,filled with cured salmonand and chives. .Try a lemon and polenta pudding with berries. .tomate cherry ragout with "white german sausages"(waissburst,i guess) .Banana bread with chocolate chips. | Spinach salmon muffins? Yum. Recipe, please? And somebody already said stuffed tomatoes, but we like to take small cherry toms or even Romas and stuff them with cheese/garlic grits--run under a broiler til tops are brown. They keep okay in a steamer pan if you use a sturdy tomato. I love carmelized onion/sausage/apple quiche for brunch. Also I like to fry apples, but not put in sugar or cinnamon--I like to use rosemary instead. Another fun brunch thing to do if you've got boozers in the crowd is offer a Bloody Mary special--use long skewers and thread them with chunks of tomato, celery, radishes, pickled okra, olives, then serve them in bloodies. |

| What about good old fashioned cream chipped beef! Definately one of my favorites. Eggs benedict. I agree with pete those pre made crepes are very good and a whole lot easier than busting out hundreds of those little bastards. |

| Hi dirtydishes: Here it comes: .3 cups cornmeal .3 cups flour .2 1/2 tbsp baking powder .1 tbsp sal . 1 tbsp black pepper .6 eggs .3 cups milk .2 cups olive oil . 1 1/2 cups graved lax or smoked salmon(chopped) .a few spinach leaves.(chiffonade) Combine dry ingredients,mix in wet ingredients,and stir well.Bake at 200°(400°f) Hasta luego!!

| Here's a bacon thing I do that customers like: combine 1 part flour with 2 parts brown sugar. Dredge bacon slices, place on parchment lined sheet pans, top with fresh cracked pepper and bake @ 350 till done. Kimmie, Thanks for the Williams Sonoma link. Good stuff on there. You think you've seen all the good sights but there's always more! I like that the WS sight has pictures of the finished product (since I've never seen an apples charlotte before I had to go look!).
