Default 4th Cooking

I started in n prep for tomorrows party. Fried off 4 pounds of bacon for the beans. Made the pork sauce. Need to chop onions yet and put the beans together and into the fridge until tomorrow morning.
6 slabs of spares on the menu, 32 pounds of pork butt, a 12 pound turkey, and a few salmon fillets in a brine for the ones who won't eat pork.

Smaller scale and simple here.

Garlic burgers with a horseradish cheddar cheese, fries, pickles, olives, cantaloupe, watermelon and so on.

Just my cat today tomorrow is the big event. I am firing up the pit at 5AM. Around 30 people coming, some from 400 miles away.

Mary, with your description of your preps and menu, I'd be happy to drive 400 miles, even with $4.50 gas.

Happy Fourth of July.

Mike

5AM is to dang early to be out of bed! Pit is heating up, butts are rubbed, working on the beans.

Holy cow, that is early. Lots of coffee I'm guessing? That's the only way I'd ever get up that early.

No coffee or caffeine the food was a hit like usual. I sent some leftovers home with everyone and froze some pulled pork for myself. The day I cook it I never want to eat it my head is so full of smoke that I can't really taste the meat. Had some pulled pork tonight for supper though and it was some of the best I have made.
