I was about to write, much more prosaically, "dirt," but bdl's poetic version is much more appealing. It's a very special kind of dirt, for sure. There are alot of truffled things that taste really bad, to my mouth, but i suspect they;re made with bad truffles, or truffle extract or soemthing like that. But the couple of times i had fettuccine with butter and truffles i'd have to agree with the very special dirt taste. (Note, too, that my cooking career began with extensive mudpie baking as a kid, and i always loved that special autumn smell of the dirt).
