Just to throw one more option for you, try canned Ahi Tuna. Not quite as strong in smell and flavor as the albacore. Furthermore, try to stay with the likes of Dave's Albacore. Those small shops generally like to package only premium grade (grade 2 and better) tuna.
Canned Ahi Tuna may be a little difficult to find, I did see it at my local Whole Foods not too long ago. I can it and sell it my shop. I package it three different flavors: Ahi in Olive Oil, Ahi w/Garlic, and Ahi with Jalapeno. The two flavored ones smell like Garlic or Jalapeno and not fishy at all.

Dave packs the Ahi and Hawaiian Ono tuna fillets as well as albacore. I'll have to look for the Ahi - thanks for the suggestion.

I had some of Dave's albacore in olive oil last night. It's definitely better than the more typical commercial tuna, as well as being superior to the Genova that was mentioned here. However, if you're going to be making tuna salad with lots of mayo and additions, the taste and texture of Dave's, and I presume your tuna as well, may be masked.

Where's your shop? What's the name? Is it on line?

If you have a few minutes to kill, read my 'Canned Salmon' thread in the 'Late Night Cafe' forum. It didn't seem like an appropriate posting here.

I like yellowfin tuna from the Fred Meyer chain.

I may be the exception here, but I like the smell of opening a can of tuna.

Yellowfin tuna is my favorite.

I happened to search Bar crudo restaurant from Boorah site during my last visit to SF.

Yellowfin there was awesome. It was spicy & it simply melted in the mouth. So fresh!!!
