Default Storing in Opened Cans

I've read (several times from various sources) that it's not a good idea to store unused or left over canned goods in the can in which they came. It has been recommended that the unused portion of the item be stored in a separate, covered container (I use French working glasses or glass bowls).

What is the reason for not using the original can for storage?

Botchalism. You dont want to eat that. Plus im sure the food takes on the taste of the can once theres air surounding the food between the product and the can.

Hi Shel,
the main reason is oxidation and corrosion of the metal. Most of the time food is acidic. It is either slightly to very acidic. Acidity in the presence of oxygen (air) corrodes metal. This means that once a can is open the content is more prone to corrode the metal. The reason why it is better to store in another container.

Food companies are trying to minimize this effect by lining the cans with a polymer (plastic) liner. They may be solving one problem but creating another which is BisPhenol A leaching but that is another subject...

Hi Luc,

Coincidentally, just yesterday I received an email about the BPA problem, which I've been familiar with for quite some time. I tend not to use any plastic items, especially for storage. Sheesh! I hate the stuff!!!!! I'll see if I can post the info - verrrry interrresting stuff.

From the Environmental Working Group:
I have great news. Last month, we told you about two California
state Senate bills that would ban toxic chemicals.

SB 1713 would ban BPA, a hormone disruptor, from baby
bottles and sippy cups. SB 1313 would ban cancer-causing PFCs
(Teflon chemicals) from food products. Both bills are sponsored
by Environmental Working Group.
