Default a little help with identification...

My girlfriend and I had lunch at a restaurant in Northampton that seems to specialize in soups, and the one I had was lovely... I believe it was called Thai Red Curry with Chicken, or something to that effect. At any rate, it was delicious and I need it in my life again. Would any of you fine upstanding citizens happen to have a recipe for what I'm calling Thai Red Curry with Chicken? I looked through a couple of my cook books to no avail. Any help would be greatly appreciate.

Thai Red Curry paste is available in stores -- Thai Kitchen is a brand I've seen in supermarkets. That might give you a start.

Some further information might be helpful. Was it a thin, fairly clear broth soup, or opaque white and somewhat creamy? Lots of exotic veggies, or fairly simple? Sweet, hot, pungent, ??

A simple, clear soup would be to heat about a tablespoon of Thai red curry paste in about 2 teaspoons of peanut oil, stirring frequently. When fragrant add in a cup or so of diced, raw chicken meat, stir for a minute or two, coating the chicken bits with the curry paste. Add in a couple cups of chicken broth, simmer until done. Veggies like green onions, lemongrass, various mushrooms, kafir lime leaves and such could be added.

A thicker, sweeter white soup could be made in a similar fashion using coconut milk instead of chicken broth. Without a better description it is a bit difficult to point you in the proper direction.

I googled "red + curry + soup" and got a s**tload of hits. Here's the first: Thai Red Curry Soup with Chicken and Vegetables Recipe at Epicurious.com

Here's another I though looked okay: Gang Kai: Thai Red Curry Soup Recipe | Recipezaar FWIW, although the recipezaar calls it Gang Kai, red curry is "gang dang."
