How about a flavorful veggie and pasta salad? Add whatever veggies she (and you) like. Try blanching (lightly cooking in the microwave will work) broccoli, asparagus, cauliflower... make sure everything is small enough to give a good mix of pasta and veg in each forkful. I use smallish pasta (tiny bowties, orzo, etc.) for the same reason.
I like to add red and green (sometimes yellow) bell peppers, halved or quartered grape tomatoes, slivers of kalamata olives and crumbled feta cheese. I dress it with a nice red wine vinaigrette with some fresh herbs, and you've got a salad that'll stay fresh even on a hot summer day.
Add some really good bread or rolls, maybe some breadsticks and butter, some wine or other libations, and you're set.
For dessert try a Summer Pudding. It's basically buttered bread, fresh berries and some other simple ingredients, pressed into a bowl or other mold and chilled. YUM!
