Restaurateurs--are you serving green tea? Are the sales increasing? Are people interested in it for the taste/pure enjoyment, or are they greatly influenced by the latest health claims? Looking for information for an upcoming article. Thanks.

i have had the pleasure of working with an ice cream co. on spacific flavors and we developed several for the restaurant where i am pastry chef. one was passion green tea sorbet. not only beautiful but wonderfully flavorful. check out 4gelato.com and tell them chef brown sent you. pete makes the most wonderful frozen stuff. he custom blends and still answers the phone, i can't say enough good stuff about that co.! green tea is big and getting bigger. keep an eye out for kaffir lime leaves, next week i will be using kaffir limes in butter milk yogurt lecce pastells. (please forgive the typos.)

These sound like some interesting and tasty ideas. Know of any restaurants that actually serve green tea as a beverage? I would like to contact them as I am working on an article for Chef Magazine.

Indeed, the restaurant I work at sells quite a bit as a green iced tea drink.

I have cooked with green tea in many different ways, from sauces and marinades to baked goods and desserts. I believe the true draw towards green tea is not so much due to its health benifits but more so the customers lack of knowledge towards green tea. It is interesting to the consumer and sounds exotic when added into the menu description of a dish. I have had success pushing items in the past when adding green tea to the ingreident list. I also enjoy cooking with this product. I believe that it has a very distinct and interesting flavor profile and pairs well with a wide range of foods.

Green tea has only just hit the market here in south africa, with the launch of Lipton green tea. The obvious marketing angle for this product is its antioxidative properties. I do beleive green tea has a future in the culinary world much the same way the use of fresh herbs has built a reputation (Im talking household) over the past 5 years. Question is which celebrity chef is going to put his/her face on the product.
